Glad to see things are doing well with you. Here's a potato salad recipe similar to the one you posted that you need to try:
Potatoes
2 lbs of unpeeled red potatoes, halved and quartered and boiled for 13 minutes, then drained (about 6 cups)
4 clove of garlic, minced
1/8 cup of olive oil
1 can anchovies (you won't taste the fish, this is for salt don't substitute)
1/2 cup balsamic vinegar
toss
add cup grated Parmesan
toss
add 1/2 cup fresh chopped mint
The first day it tastes awesome. The second day it tastes even better. But the fourth day it spoils because of the vinegar.
Let me know. I call this Paisano Potato Salad
